Pumpkin Spice Muffins with Streusal (You're not going to believe what the ingredients are!)



I don't know if pumpkin is a southern thing. You always hear of pumpkin pie on Southern tables at Thanksgiving and such, but no one in my family has ever made a pumpkin pie to my knowledge. I had never tasted anything at all with pumpkin until about three years ago. While on a quilting retreat, we were served these delicious spice muffins and I just had to have the recipe. Imagine my surprise (and Mama's) when we found out they were pumpkin!

You see, Mama had always claimed to dislike anything pumpkin. She had tried pumpkin pie as a child and whenever we asked about it she would just shake her head and say "Its kind of slimy, trust me, you wouldn't like it". Of course, we took her word for it, and each one of us grew up to be avowed pumpkin dislikers as well. You know, I'm pretty sure "disliker" is not a word but it makes perfect sense in that sentence, doesn't it? See, the English language just needs to keep up with me and we'll all be better off.

Anyway, as it turns out, Mama must have gotten a hold of a bad piece of pumpkin pie as a child because we have both broadened our horizons with regards to pumpkin since that muffin incident and it is now a regular part in our holiday baking, as well as year round baking thanks to these muffins.

No, these aren't the ones we had on retreat. They are actually better except for one thing - those on the retreat were baked for us, you have to bake these yourself. Everything tastes better when someone else cooks it for you!

A neighbor of a friend gave me this recipe when I was telling her about the muffins. She was of the Northern persuasion and, thinking pumpkin was a Northern thing at the time, I asked her if she happened to know how to make pumpkin muffins.

Her face immediately lit up with glee at getting to pass this recipe on to one more person and now I share that glee in passing it on to you. To quote the person who first gave it to me..."If you want to make the BEST pumpkin muffins on earth..."

Oooh ooh! The best part...I added the streusel topping from Grandmama's Sweet Potato Casserole to them! They were good before but now - WOW! Tastes like something you'd get in a coffee shop. Go ahead, impress someone with your culinary skill today. Just make sure you hide the cake mix box in the very bottom of your trash can. Putting a few crumpled paper towels on top of it wouldn't hurt, either.


For the muffins, you'll need: A box of spice cake mix and a can of pumpkin.
I have no idea why I am on such a cake mix kick lately.
I swear to y'all I know how to make things from scratch.
But this is so easy and so gooooood!
Dump your can of pumpkin and your box of cake mix in a bowl. Add 1/2 cup water.
Thats it. Seriously.

Ohmigosh! these are good. I made these a few weeks ago for this tutorial and I got up early this morning to make them for breakfast after working on this tutorial last night!!!

Alright, mix all of that up until it looks like this.



Grease your muffin tin well with either cooking spray or shortening.

I was out of cooking spray so I used shortening.
Measure out your batter into greased muffin cups.
This doesn't rise too much so you can fill them a bit fuller thank you normally do.
Now lets make our streusel or Yum Topping as my kidders call it.
(They are just not very worldly at this point and words like streusel kinda freak them out a bit.
The angle of this picture is making me dizzy. I could edit it and rotate it but I'd have to do that in another program and Katy has found my son's battery operated pencil sharpener and is currently sharpening every pencil she can find down to a nub so I kinda need to get on with this tutorial)


In a bowl, place your stick of margarine, cup of brown sugar, and cup of plain flour.
Yes, this is making a lot but don't worry, I'll show ya what to do with leftovers.


With a long tined fork, cut in your margarine. Just keep pressing down with your fork like I am doing here until it looks like the next picture, you'll need to stir a bit as you cut.
If your margarine is not room temp, this is going to be pretty difficult so plan ahead a bit for this.
Don't try to take a shortcut of warming your margarine in the microwave, that will create melted spots and your topping will become rather sticky and more of a pain to deal with in general. Just put it on the counter, take a few deep breaths, and go read Southern Plate for a bit ~winks and grins~

Voila! Ze topping is done!!!!
(This is streusel, so that was my German accent. Kinda lacking, I know.)

I sprinkled my yum topping over half of them and patted it down a bit.

If you have any topping left, just put it in a plastic bag and store it in your fridge to use as a topping on other muffins, coffee cakes, or the like in the next few weeks. If you don't know when you are going to be able to use it, just stick it in the freezer. Thats what I did and this morning I got it out and used it when I made these again.
Bake at 350 for 20-24 minutes!
Remove from pan and dig in !
Don't these look lovely? You can only imagine how wonderful they make your house smell!
Streusel Topped Pumpkin Spice Muffins

1 box spice cake mix
1 can pumpkin
1/2 cup water

Preheat oven to 350. Grease a 12 cup muffin tin. In mixing bowl, place all ingredients. Mix until well blended. Scoop into muffin tin. Make topping.

Topping:
1 C Brown Sugar
1 Stick Margarine
1 C Flour

Stir together flour and brown sugar, breaking up any lumps. Cut in margarine. Spoon or sprinkle on top of muffins, pat down slightly. Bake at 350 for 20-24 minutes.


*Any leftover topping can be refrigerated for several weeks or frozen for several months until needed.

Chewy Sugar Cookies and KING ARTHUR FLOUR GIVEAWAY!

Christmas seems to get more and more hectic each year when you have a family. Shopping, decorating, lists, baking, Christmas cards, wrapping, watching your budget, crafting, and all of the other little things we do to make the season special for our families.

While our kids and spouses get to sit back and enjoy the season, we rush and run around to create more magic, more, More..MORE!! ~laughs~ It gets a little harried, but I have one thing I do that I look forward to every year. Each year around this time, I start cookbook shopping. Not an ordinary book, but a big old thick cookbook with a nice hardback cover that I can really curl up with.

I really enjoy looking over my different options, reading reviews, pondering the pros of this one or that...and then I finally make my decision. I always order it by mail (Usually Amazon.com) so that it arrives sealed up in a box. Here is the important part: I do not open that box! I wrap it the day it comes in and place it beneath the tree with my name on it.

The remaining weeks are spent with me casting longing glances beneath the tree and looking forward to Christmas morning where I unwrap my prize and spend the better part of that day curled up in the recliner leisurely flipping through pages, enjoying my new toy as my kids enjoy theirs.

For two of the past few years, those books have been from King Arthur Flour. I love cookbooks, but it takes a lot for me to get really excited over one. There are four cookbooks in print right now that I trust completely. I own two King Arthur Flour cookbooks, so they hold two of those places!

You know how you see a new recipe, want to take it to an event, but feel you need to "try it out" first to make sure it tastes good? My favorite cookbooks are the ones which I trust completely, they require no trials or testing. You can choose a recipe and make it for the very first time to take to a grand event and know it will be perfect and loved by all. That's how King Arthur recipes are.

The two King Arthur books I have (and love) are The King Arthur Flour Baker's Companion: The All-Purpose Baking Cookbook and the The King Arthur Flour Cookie Companion: The Essential Cookie Cookbook. Ready for the exciting news?

The incredibly kind folks at King Arthur flour are going to give one of my reader's their very own Cookie Companion! This cookbook is the essential guide on cookies. Just for sugar cookies alone there are 15 recipes and at least as many for our beloved chocolate chip! Each recipe features an introduction which describes the cookie texture and flavor..allowing you to choose exactly the type you are looking for with ease and confidence.

I still haven't chosen my cookbook for this year. I need to pay another visit to King Arthur Flour's site...

Now on to these delicious cookies...

My son has always loved the sugar cookies they sell in the malls. He calls them "sprinkle cookies" because they are covered in colorful sprinkles. I made these for the first time a few years back and he was elated when he came home from school. He actually thought I had been to the mall just to buy him cookies! They taste so wonderful and really beg to be dunked into a glass of milk. These are classic Santa cookies! You won't believe the texture. When you pick them up, they feel like a regular cookie, but biting in reveals a tender chewiness unlike any other.



You'll need: unsalted butter, sugar, brown sugar, light corn syrup, vanilla, baking powder, baking soda, salt, egg, all purpose flour, and decorating sugars for coating.
The original recipe also calls for 1/4 tsp nutmeg or 1/4 tsp lemon oil and states that it is optional. I don't know why I've never liked nutmeg, but I've always left it out whenever it was called for or substituted cinnamon. In this case, I just left it out. I don't have lemon oil so I left that out as well. I tend to not buy anything that I don't normally have on hand anyway. I just don't like to buy things for one use because....well mainly because I am cheap. But then again y'all already know that by all of the great value brand items you see in the pic!
I want to apologize for not using King Arthur Flour in this! I always use King Arthur when making yeast breads and it has been proven to be a superior flour than others. I love King Arthur, but don't always get to the store that sells a good selection to buy it! Hey, I DID buy real butter for this recipe though! (Don't tell on me, but I usually just use margarine...shh!)
Place butter in bowl.
Now folks, from here on out you will be seeing me make a DOUBLE version of this recipe. However, the recipe at the bottom is for a single version. Y'all know me..if three dozen is good, six dozen is GREAT!


Add in white and brown sugar as well as light corn syrup.
~insert tangent here~
We always use Karo brand corn syrup. My daughter's name is Katy Rose and that has become her nickname as well. I do get strange looks when I'm out and talking to my Karo though...
Hey, Southerners are known for nicknaming everyone they love. I think I've mentioned my nickname ages ago but for those of you who missed it...
My entire family calls me "Poochie", and I even answer to it. My friend, Michael, has always called me that as well. (Michael says I do not talk about him enough on here...Michael Romine - teaches Marketing to high school students - in high school he was like 6'4" and weighed about eighty pounds soaking wet. I called him string bean then :) Feeling the love now, Michael?)
Anyway, I got my nickname when my brother came to see me after I was born in the hospital. He took one look at me, spit on me, and said I was ugly and looked like a Poochie Dog. Only in the south would that moment offer up a nickname considered a term of endearment!


Add vanilla.
Add eggs...
Mix that up well.
Add in flour.
You should probably do this gradually but I have the patience of a gnat so I just dump it all in at once.
Mix that up well...until it looks like this!
If you don't take a pinch of this to taste you aren't living, this dough is heavenly!
Have one of your kids dump the entire bottle of red sprinkles into a bowl.
They'll think this is cool. They think they don't get to dump things out enough.
Add the green as well and stir. Or have them stir..I'm using my son for this because Karo is taking a nap.

Preheat your oven to 375 and spray a baking sheet with cooking spray.
Roll dough into one inch balls...or one inch-ish.
and then let your kidders roll them in the sugars.

Place about two inches or so apart on a cookie sheet.
Like this.
Bake for ten minutes and then remove.
Let cool on cookie sheet for five minutes and then remove to cooling racks (or platters) to continue cooling.
My grandmother's best friend, Miss Millie, called my mother to tell her I had gotten my nails done and they looked "so pretty"! ~laughs~ Thanks, Millie! I decided to treat myself. Miss Millie is my second grandmother and she reads Southern Plate every day!

The Essential Chewey Sugar Cookie
3/4 Cup (1 1/2 sticks) unsalted butter
3/4 cups granulated sugar
1/2 Cup brown sugar
1/4 Cup light corn syrup
2 tsp vanilla
1/4 tsp nutmeg or 1/4 tsp lemon oil (optional, your choice - I left both of these out)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
2 1/2 cups unbleached, all purpose flour
1/4 cup coarse or granulated sugar, for decorating

Preheat oven to 375. Lightly grease (or line with parchment) two baking sheets. In a large mixing bowl, beat together butter, granulated and brown sugars, corn syurup, vanilla, nutmeg, baking powder, baking soda, salt, and egg. Stir in flour.

Place coarse sugar in shallow dish. Drop dough by tablespoonfull (a tablespoon cookie scoop works well here) into sugar, rolling the balls to coat them. Place on prepared baking sheets. (We just dig out hands in the dough, grab a bit, and roll it up in a ball - I've never owned a cookie scoop!)

Bake cookies for ten minutes until the edges are just barely beginning to brown, they'll look soft. If you bake these cookies too long, they'll be crunch rather than chewy. Remove from oven and cool on baking sheet for 5 minutes, then transfer to rack to cool completely.

Bama Steak Sandwiches (So very EASY)



I have so many things photographed and ready to bring you that my mind is reeling with what to do first! Today I decided to bring you a super quick and easy recipe to give us all a break during the rushed holiday season. Can you believe, after all you do, your family STILL expects supper every night? ~grins~

Even though the world won't stop for us, we can at least streamline things a bit by serving these gorgeous sandwiches. My nine year old has fits over them and my husband just moans while he eats them, unable to put it down long enough to speak!

This is what I make when I just don't feel like cooking (can you believe I sometimes don't feel like cooking? Shocks even me!). You know what? I had these done from start to finish in TEN MINUTES!
Lets start our week off easy, shall we? 


 
You'll need: 1 pound of roast beef lunch meat (I just got mine in the Wal Mart deli), one to two cups mozzarella cheese, a package of soft deli rolls, onion, margarine, and Dale's Sauce. 
If you don't have Dale's Sauce, you can use Moore's Marinade, soy sauce, or a little bit of Worcestershire sauce.

 
Chop up your roast beef a bit.

 
Chop up your onion. 
(also chop your bell peppers. I kept mine rather large because my family members would have a coniption fit if they had bell peppers on their sandwiches)

 
Melt 1/2 stick butter or margarine in skillet. 

 
Add your onions to the skillet. I snuck some bell peppers in there but kept them fairly large so I could pick them out and not put them on my family's sandwiches. 
You see, my son and husband think they will keel over and die if they ever have to eat a bell pepper. I think they were dropped on their heads as children, but I'm pretty sure I've said that before in previous posts :). 
Add a tablespoon or so of your sauce, depending on your taste. 

 
Cook this over medium heat until your onions are tender, stirring often. 

 
Add chopped roast beef and continue cooking and stirring just until your roast beef is warmed. 

 
If you like, add another two tablespoons of your sauce. 

 
Once that has been stirred in and your roast beef is good and warm, turn off stove eye and sprinkle cheese all over the top and let sit until melted. 

 
Spoon onto your sandwich rolls. 

 
DIVE IN!!! Oh, doesn't that look YUMMY?
If you like, you can also make this filling the day before and just put it in the fridge, then heat up your filling in the microwave and place on your roll and you're good to go! 

Bama Steak And Cheese Sandwiches

1 lb Deli Roast Beef
1-2 Cups Mozarella Cheese (or cheese of your choice)
1/2 stick margarine or butter
1 onion, chopped
1 bell pepper, chopped (optional)
3-4 Tablespoons Dale's Sauce (can use Moore's Marinade, Soy Sauce, Worcestershire sauce, etc)
Soft Deli Rolls (such as Sara Lee)

Chop up roast beef. In large skillet, melt 1/2 stick margarine or butter. Add 1-2 tablespoons sauce, according to taste. Add onions and peppers and saute until tender. Add roast beef and additional sauce (according to taste) and continue cooking over medium heat until just warmed. Take off heat and sprinkle cheese over top. Let sit until melted and then spoon onto rolls.
